Rosemary Curry Potatoes





3-4 medium to large russet potatoes peeled and diced
1 onion cut into 6ths
1 onion sliced thinly
3 - 4 medium carrots peeled and chopped
1 1/2 tbsp yellow curry powder
1 tsp cumin
1 tsp salt
1/2 tsp black pepper
1/4 cup olive oil
2 stripped rosemary sprigs
1 teaspoon fresh thyme leaves crushed. 

On bottom of double heavy duty foil packet, spread out sliced onion and a little oil. These will likely burn a little. That is ok. We are doing this to protect the potatoes and burned onion is tasty. Mix rest of ingredients in a large bowl, making sure everything is evenly coated. Depending on size of potatoes you may need more spices or oil. Should look kinda like this. 


Put on 400 to 450 degree grill over indirect heat for 35 minutes. Rest for 25 minutes and serve. 

This went nicely with a pork tenderloin.
